It's been such a whirlwind I haven't had time to blog...or make anything interesting for dinner lately. Tonight I mixed sweet potato puree with fat free refried beans (I point out the fat free because this dish is just gross when you get it in a restaurant but Whole Foods makes a healthy version that is basically just pintos mashed with spices and garlic) and a side of mashed avocado. Basically we were a tortilla wrap and some salsa shy of a burrito.
But I just bought a couple of new cookbooks (Eggs and New Flavors For Vegetables) and can't wait to try some new stuff. I also bought a bunch of mommy books last weekend during a moment of "I feel like I'm the only person going through this insanity." I've already forgotten most of what I read but this one line stuck out:
"...four days without vegetables never killed anybody." From Just Let Me Lie Down.
